Scallion Oil Noodles is a famous street food dish in Asia that I grew up eating.
With only FIVE ingredients, the Scallion Oil is packed with so much flavor that it tastes good with everything.
Homemade Scallion Oil doesn’t only taste good with noodles; I love to drizzle it all over my other dishes such as steamed fish, chicken, vegetables, and rice.
Other than homemade chili oil, scallion oil is another condiment that I always have in my kitchen. That way, you can make a simple yet delicious dinner in less than 5 minutes!
You can use any noodles of your choice when making Scallion Oil Noodles.
I am using wide hand-cut noodles, but you can also use udon, white noodles, ramen noodles, or any noodle of your choice.
If you are on a keto diet, I highly recommend using shirataki noodles.
I also have a hand-cut noodle recipe that is super easy. You can prepare the noodles in bulk and freeze up to 2 months.
Customize the Scallion Oil Noodles depending on time, what you have in the fridge, and your diet.
Scallion Oil Noodles is vegetarian-friendly, so you can add on any protein of your choice.
I like to add toppings such as thinly sliced cucumber, chopped green onion, cilantro, and crispy fried egg. You can also add shredded chicken, crispy fried scallion, and crushed peanuts.

Ingredients
- 8-10 stocks of Green Onion
- 1 cup of Oil
- 4 tbsp of Soy Sauce
- 2 tbsp of Dark Soy Sauce
- 2.5 tbsp of Vegetarian Oyster Sauce (optional)
- 2 tbsp of Sugar
Recommended Noodles: Fresh noodles or Dry Hand-Cut Noodles or Chinese Ramen Noodles
- Cut Green Onion into 2-inch pieces and pat dry.
- In a pot, add in oil and add in the white parts of the green onion. Turn the heat up to medium-low and let the white parts of the green onion sizzle for 10-15 minutes. Make sure to keep an eye out to prevent the green onion from burning.
- Add in the green parts of the green onion, and fry for another 5-10 minutes. Remove any burnt pieces.
- In a bowl, mix soy sauce, dark soy sauce, vegetarian oyster sauce, and sugar.
- Once all the green onion is removed, turn the heat off and let it cool off for 2-3 minutes.
- Next, add in the soy sauce mixture. The oil may splatter, so make sure to heat off before pouring in the soy sauce.
- Mix until sugar is fully dissolved. This can store in the fridge foir 2-3 weeks.
- Optional, but HIGHLY recommended, fry an egg.
- Start with your favorite noodles, drizzle 2-3 tbsp of oil all over the noodles, topped with a fried egg. ENJOY!
